Como no puedo comer el pimiento en crudo ... os dejo esta versión en la que he realizado un pequeño sofrito , pero es opcional para aquellos que gusten de comer la verdura en crudo.
Os dejo esta recetita perfecta para verano y que dedico con mucho gusto a mi compi Montse !!!

- 250 gr lenteja (yo usé de bote)
- 1 lata pequeña de maíz
- 1 lata atún al natural
- 1 pimiento rojo
- 1/2 cebolla
- 1 ajo
- 1/2 calabacin grandecito
- 125 gr mozzarella baja en grasas
- 2 cdas soperas de uvas pasas
- Aove *opcional
- Aceite de sesamo
- Vinagre de manzana
- Sal

- Como os explicaba, no puedo comer el pimiento en crudo, así que con una gotita de aove, he puesto a sofreír ligeramente el pimiento. Una vez comience a ablandar, añadiremos la cebolla y el ajo.. todo bien picadito. Añadiremos sal

- Una vez tenemos la cebolla con color... rallamos el calabacín, lo escurrimos muy bien y lo incorporamos a la sartén, para dejarlo tan solo un minutito. Reservamos el sofrito para que enfríe mientras preparamos el resto
- Picamos en trocitos la mozzarella

- Escurrimos el atún y el maíz
- Incorporamos todo al bol donde vamos a montar la ensalada. Incorporamos también el sofrito de pimiento

- Por último... añadimos las uvas pasas y aliñamos con un chorrito de aceite de sésamo y vinagre de manzana, removemos y reservamos un ratito en la nevera antes de consumir
