  1. Pelamos y troceamos la manzana y metemos 2 min en el micro para ablandarla y con un tenedor la hacemos compota.

  3. Separamos claras de yemas y batimos las claras a punto de nieve, añadimos las yemas, la compota de manzana y el sirope de agave intentando no bajar las claras.
  4. Mezclamos las harinas con la canela y la levadura y añadimos a los ingredientes húmedos con movimientos envolventes.
  5. En un molde vertemos la mitad de la masa, cubrimos con la mitad de los higos pelados y troceados; vertemos el resto de la masa y cubrimos con el resto de los higos.
  6. Horneamos unos 35min. hasta que el cuchillo salga limpio, dejamos, enfriar, desmoldamos y listo para disfrutar!
